Roasted vegetables.
What you do is slice up zucchini, carrots, yellow and red beets, eggplant, and put in some green beans. Grease a roasting pan with coconut oil, layer the veggies, then brush the veggies with olive oil. Sprinkle with black pepper and red pepper. Bake at 425 for about 20 mins. Let them cool and they are crunchy.
